Chef Roy Diedos was born and raised in the Philippines where he started cooking at the age of 7. He learned to cook in order to assist his mother in feeding her 13 children.
“Our house was like a small restaurant with so many people needing be fed, and I learned to love being in the kitchen at an early age.”
Chef Roy studied International Cuisine in the Philippines prior to moving to Florida in 1994. Chef Roy studied Culinary Arts in Orlando and worked several years at the Royal Plaza at Disney Property. Chef Roy gained much of his sushi knowledge from AFC Company, where he opened several locations serving sushi and training others in the fine art of great sushi. While working at the Amora, the number one rated sushi restaurant 8 years in a row in Orlando, FL, Chef Roy was recruited to come to Greenville to open AZIA.
